A classic Scottish winter ale. This Wee Heavy was brewed using marris otter malts, with a blend of caramaly, crystal, and amber malts then cold conditioned for six weeks to give a rich caramel and biscuit body with a crisp, clean finish.
this is a recepie based on a beer reclaimed from the ship Wallacia that sank in the Clyde Estuary. It's made using the mixed culture harvested from the shipwrecked bottles and has then been barrel-aged in North British whisky casks.
Dark Lagers are a thing of beauty; a knife edge's balance of crisp simplicity and complex roasty deliciousness. They used whole flower heritage hops and regenerative grain kilned at lower moisture levels to give a snappy, crisp roasty character.
Roasty, dark and rich this beer is inspired by the once common porters of the 19th Century. A full bodied backbone of Chevalier malt supports strong and lingering roasted flavours from the malt and high hopping rates characteristic of the time.

This version of the collaboration between Redemption and The Kernel was brewed at the Kernel's brewery in Bermondsey. The colour mirrors the depths of autumn, showcasing hues of brown, russet, and intensely concentrated reds
